Basic cake

200gr unsalted butter + extra for greasing
200gr sugar
4 large eggs
200gr all-purpose flour
2 tsp baking powder
1 tsp vanilla extract
lemon rasp of one lemon
pinch of salt
All ingredients need to be a room temperature.
Pre-heat the oven at 175ºC (350ºF). Grease a cake pan with some butter. In a bowl mix the butter until creamy. Continue mixing while adding the lemon rasp, vanilla extract and sugar. When the sugar is all incorporate, add the eggs one by one. Make sure one egg is fully incorporated before adding the next one. In a separate bowl, sift the flour with the baking powder and a pinch of salt. Add the flour to the butter mixture and mix until all the flour is incorporate. Do not over mix. Transfer the cake mixture to the cake pan and put it in the center of the oven. Bake for about 60 minutes.
